Spicy, easy and super YUM!! And THAT’S why it is in my regular rotation. It’s also very versatile. This version is a Middle Eastern recipe but Kofta’s (aka Kafte, Kefte, Kafta etc) is ubiquitous in Asia, Middle East and Europe. You can use any of the local spices and come up with your own version. For Indian use Garam Masala, for Asian use sesame oil and ginger. For a European version (aka meatballs) use garlic and onion. You get the idea!
Middle Eastern Kofta (Mini Meatloaves)
Ingredients
- Kofta:
- 2 lb ground lamb
- 1/2 tsp fresh thyme, chopped
- 1/2 tsp pepper
- 1 tsp salt
- 4 eggs
- 1/2 red onion, chopped
- 1 Tbs smoked paprika
- 2 cloves garlic, minced
- Greek Salad Ingredients:
- spinach
- Kalamata olives
- Feta cheese
- red onion
- toasted almond slices
- Vinaigrette Ingredients:
- 1/4 cup olive oil
- 1/4 cup white vinegar
- 1/4 cup orange juice
- 1 Tbs mustard
Instructions
- Kofta:
- Mix all ingredients in a large bowl.
- Place wire rack in baking dish.
- Shape meat mixture into 4 inch flat ovals and place on wire rack in baking dish.
- Broil in oven for 7-10 minutes, turning halfway through, until cooked through.
- Serve with pita bread, yogurt sauce and greek salad.
- Greek Salad:
- Toss salad ingredients with vinaigrette.
